We can't have Teflon due to the risk to our birds, and I dearly miss it. I needed some new pans to add some capacity to my kitchen. Given my initial experience, I think high-heat blackening would create the same problem I initially had with serious staining, and probably wouldn't be good for the stainless pan in terms of warping. Especially if the recipe utilizes a low- or no-fat sear on, for instance, a spice-coated meat or fish. If you want to do some really high-heat searing or blackening, I would strongly suggest the small investment in a good cast iron skillet. I can see where using metal tools would cause some serious damage, and are unnecessary, anyway. Oh, and absolutely you must use non-metal tools! Silicon spatulas, teflon or plastic coated spoons and spatulas, etc. Maybe not as good as All-Clad, but for the money, a great value and a fine performer. We love the helper handle, although unlike the main handle, this does get quite hot and requires use of an oven mitt. Although I think I'll stick with my cast aluminum pots because if you get crusties, they are really easy to scrub out. The handle stays cool during cooking - quite a difference from my Calphalon aluminum skillets, where the handles get as hot as the skillet! Once I mastered the technique of cooking with stainless, I'm very happy. Has worked well with several styles of eggs, as long as you don't overheat it!Īnd cleanup with hot water and a sponge is a snap, although I occasionally need to use the very soft plastic scrub pad on the back of the sponge for a couple of stubborn spots. No sticking of meats or fish as long as you cook long enough to allow the food to release, which you should do anyway. No need to use high heat to get great browning. Subsequent use, applying the proper technique of slow, medium-low heating before fully heating it up, then adding oil/butter and the items to be cooked has produced fantastic results, including great fond and even a nice sear (although I prefer my cast iron pan for a full-on seer to something like blackened fish). And, much to my surprise, there were no scratch marks on the inside of the pan. However, the good news is that after repeated heatings with water and baking soda, then careful and vigorous hot water scrubbing with a paste of Bon Ami/Barkeeper's Friend powder and a fairly benign plastic scrub pad, I was able to remove all the baked-on stuff. No way could I remove this film with a sponge and hot water. Actually, it was more like a thin, glued-on film. I heated it too quickly and while it did a great job of developing a fond, I was left with a dark brown crust in the pan. Having previously used heavy all-aluminium skillets, I must admit my first use of a stainless-clad pan was a disaster. I would actually give this 4.5 stars, but maybe not quite 5 stars because stainless does require a little babying both in heating and in cleanup.
